What style of pan slides will work best in my Metro heated cabinet?

Metro offers three different styles of pan slides for their heated cabinets: universal, lip load, and fixed wire. Universal slides can accommodate 18”x26” sheet pans and 12”x20” steam pans in a variety of depths. The universal pan slides are the most popular and can be moved up and down and removed depending on what is being stored in the cabinet. Lip load slides can accommodate 18”x26” sheet pans only, which is great for kitchens that are going through sheet pans very rapidly. Last but not least are fixed wire slides. They are just that, fixed in the cabinet. They can accommodate both 18”x26” sheet pans and 12”x20”x2.5” steam pans. They are very similar to universal slides but don’t offer the flexibility of moving the slides up and down or removing them completely.
